Finishing the orange wine tonight was not the best of ideas. There was two-thirds of a bottle left and we had already drunk a bottle of champagne. Consequently I am currently feeling woozy. And woozy is a fabulous word.
The champagne was a gift from Darren for basically doing my job. He is an excellent boss. But a bottle of bubbly was not quite enough for a Friday night and somehow we have polished off the orange wine. Damn.
I started the bottle with a phone call providing legal advice to Paul - Bridget's husband (as opposed to the Canadian version) - about leasehold law. Alcohol and legal advice is a winning combination. Having only had once glass though, I think what I said was mostly accurate. Good job he didn't ring tonight.
I think I bottled my Jeddah Gin to soon Ben. I opened a bottle yesterday and some shot up my nose and the bottle top hit the ceiling. I have re-racked it. How many times do you rack your wine Ben?
ReplyDeleteI did wonder, after reading your post. And the other thing I thought was that you should transfer any wine that you have put in a screw top bottle to something with a cork. Otherwise, you might have created a time bomb (quite literally). If there is a cork, you have a weak point, and the bottle will simply push the cork out. If you have a screw top, there is no such point, and the bottle could literally explode. So be careful.
ReplyDeleteI don't think it is about the number of times you need to re-rack, but the length of time that you need to wait before the wine has stopped fermenting. Generally I give it six months. Hope this helps.
Thanks a lot for the advice Ben. I have taken it all out of the bottles and put it back in the demijohn with the air-lock. It doesn't seem to be bubbling, but I'm not taking any chances. Suppose I should leave it for 6 months like you say. Patience is not one of my attributes. Perhaps I should start drinking it?
